Purdue University fed radomized healthy subjects three identical salads with 3 g, 8 g, or 20 g of canola, soybean oil, or butter. Blood samples taken up to 10 hours later revealed that paricipants consuming higher amounts of fat had absorbed more carotenoids than those using less oil. The monounsaturated fatty acid rich canola oil tended to enhance the absorption of these nutrients.
PositiveTip: To maximize the absorption of fat-soluble nutrients, salad dressings containing canola or olive oils are probably best.
